Tomato Salsa

1 cup tomatoes - diced or canned diced tomatoes.
1/2 cup onion - finely chopped.
1-2 jalapeno peppers - finely chopped or ground.
2 cloves garlic - finely chopped or crushed.
1 Oz fresh lime juice (1/2 lime).
2-4 tbsp fresh cilantro - chopped.
1 tsp olive oil.
1 tbsp red wine vinegar.
1/2 tsp chili powder.
1 tsp salt.
1/2 tsp black pepper.

OPTIONAL:
2 green chilis or a 4 oz can.
1/4 cup Bell pepper - finely chopped.
1/2 cup celery - finely chopped.

1. Combine half of the tomatoes + all the other ingredients.
2. Vitamix 5secs @speed5.
3. Add remainder of tomatoes, Vitamix 2secs @speed3.
   Warning: don't blend too long or the salsa will become watery!
4. Chill for a couple of hours, serve w/chips.
