Chai Tea

1.5 cup water.
1.5 cup milk.
1 tbsp black tea.
1/4 tsp ground cardamon.
1/2 whole nutmeg.
3" cinnamon stick or 1/4 tsp ground cinnamon or both.
1/4 tsp or 8 whole cloves.
1/8 tsp or 4 peppercorns.
1/4" ginger root peeled, sliced thin.
1x1/2" orange/lemon/lime peel.
1 tsp vanilla extract or 1/2 vanilla bean split and cut.
2 tbsp honey or brown sugar.

1. Bring water and milk to boil, add dry spices and tea.
2. Simmer covered 10 minutes.
3. Add vanilla extract and honey or brown sugar.
4. Strain and serve.
